Mexican Rice is full of flavours, spicy , tangy and heathy .Mexican rice bowl is full of vegetables and food grains . The Perfect Authentic Mexican Rice that is so good and so easy .it will become the side dish to make with all of your Mexican dishes. If you child don’t like to eat food grains this is how you can make the yummy ,vegetarian, vegan dish . I have given the step by step full tutorial for making the Mexican rice . - 1 Bowl Long Rice
- 3 Tsp Olive oil (or any vegetable oil)
- 3 Tsp Kidney Beans
- 3 Tsp boiled Corns
- 1 Tsp Salt
- 1/2 Bowl Red and Yellow Bell Pepper
- 1 roasted Tomato
- 2 Tsp Tomato Ketchup
- 1 Tsp Cumin powder
- 1 Tsp Red Chilli Flakes
- Fresh green spring onion leaves
- 3 Red Chilli
1 Preparation :Clean and soak 3 Tsp kidney beans for 8 Hours.Soak long rice for 1/2 hour . Boil corn and kidney beans . Make puree from the roasted tomato .
2 Cooking Heat the oil in the Pan . I will fried the red chilli first which I will use for garnishing the mexican rice . Lets start . I will use the same oil as the flavour of red chilli is added to this oil . Add grated garlic ginger paste. Add 1/2 bowl onions and fry it till gets golden brown . Add red chilli flakes and cumin powder .
Now add soaked rice and cook it till gets golden brown (at medium flame).
3 Now add salt , tomato puree and tomato ketchup . Keep on stirring .Let it cook for 2 mins. Now add 1 Bowl Vegetable broth and cook for 2-3 mins at medium flame.Cover the pan with the lid .Keep on adding vegetable broth till rice gets completely cooked .
4 Now add boiled corns and kidney beans (Rajma) mix it well . Let it cook for 1 min . Add Red and yellow bell pepper .
Mix well. Mexican rice is ready . Take out in the serving bowl and garnish the rice with spring onion leave and roasted red chilli . Serve hot and enjoy with salsa and Nachos . Happy cooking…….
