Lobia masala curry is a popular dish in Punjabi cuisine . Masala is mainly made of paste of onion , tangy tomato , and some spices . This made Lobia masala curry full of flavours . This is healthy and nutritious too . This recipe is easy to cook and very fast . Can be one pot recipe if made in pressure cooker . So goes well for tiffin /lunch boxes . Kids and adult love to eat this lobia masala curry . This goes perfect with rice or roti/chapati .

- 1 Bowl Black Eye Peas (Lobia)
- 1 Onion
- 1 Small Tomato
- 2-3 Garlic (Lasun)
- 1/2 inch Ginger (Adrak)
- 1 Tsp Salt
- 1/2 Tsp Turmeric Powder
- 5 Tsp Oil
- 1/2 Tsp Cumin Seed(Jeera)
- 1/2 Tsp Kasturi methi
- 1-2 Tsp Kashmiri Red Chilli Powder
- 2-3 Tsp Coconut (grated)
- 1 small stick Cinnamon
- 3 Green chilli
- A pinch of Hing
- Coriander Leaves
1 Soak 1 bowl of black eye peas (Lobia) at least for 1 Hour . Add some salt and boil it in the pressure cooker for 3 whistles .
2 In a small pan, take 2 tsp oil and roast garlic , ginger , 1/2 onion (roughly chopped) , grated coconut and cinnamon stick for 2-3 mins . Then grind it to make a smooth paste.
3 Now Heat 3 Tsp of oil in the pan at medium flame . Add cumin seed .pop it. now add a pinch of hing , 1/2 finely chopped onion , green chilli , tomato and cook for 3-4 mins .Add smooth onion coconut paste and roast for 3 mins . Now add salt ,turmeric powder , kashmiri red chilli powder and kasturi methi . Cook for 1 min . Add boiled lobia and mix all the ingredients properly . Now add the remaining water of boiled lobia to make a curry . Add water if require to adjust the consistency . Make the curry boil and simmer at medium flame for 2 mins .
4 Lobia masala / Black eye masala curry is ready . Garnish with finely chopped coriander leaves and serve hot with rice, roti or chapati .
