Potato pancakes,are shallow-fried pancakes of grated or ground potato, flour and a binding ingredient such as egg or applesauce, often flavored with grated garlic or onion and seasoning. They may be topped with a variety of condiments, ranging from the savory (such as sour cream or cottage cheese), to the sweet (such as apple sauce or sugar), or they may be served plain. The dish is sometimes made from mashed potatoes to make pancake-shaped croquettes. Potato pancakes are associated with the cuisines of many European traditions including German and Austrian Perfectly crispy Potato pancakes (latkes)
- 2 medium size Potatoes
- 1/4 slice of medium white onion
- 1 Egg
- Olive Oil to fry
- 1 Tsp all purpose flour/Plain flour
- 1/2 Tsp Salt
- 1/2 Tsp Red Chilli Powder
- Black Pepper
- 2 finely chopped green Chilli
- Grated ginger, cheese (Optional)
1 Peel the potatoes and grate it either by grater or food processor . Similarly grate the onion. Take out the water from potatoes and onion . You can also use clothe for this.
The water take out from peeled potatoes .It contains lots of starch which is settled at the base . So take out the water and use the base starch .Mix it with the grated potatoes and onions.
2 Now beat the egg and add salt and red chilli powder to it . Add to the grated potatoes .
Add all purpose flour too . Mix it well .You can adjust the chilli if cooking for the kids.
Also can add grated ginger and cheese if you like.Add 1 tsp Lemon juice .
3 Heat the olive oil in the pan . Make the small patties .Cook it on both side .
4 Serve patties (chila) with roasted tomato ,mayonnaise .
