Here I am giving a simple recipe for how to cook gajar matar recipe . In winter carrots , green peas can get easily . It is available very fresh . Winter is also is season for many healthy food . It says that whatever we will eat in winter is increase our immunity for whole year .We should eat this gajar matar sabji at least for 2-3 times in winter season .
Gajar Matar ki Sabzi | गाजर मटर की सब्ज़ी | Carrots With Green Peas Indian Style
Here i am giving a traditional way of cooking Gajar Matar Sabji . This is popular Punjabi cuisine and the main ingredients are Carrot and Green peas in tomato gravy . If you don’t like tomato you can also use amchoor powder instead of tomato . Winter season so I used lots of ginger . Also authentic way so used Ghee . You can also use any vegetable oil instead of ghee .
In Hong kong we cannot get the fresh red Indian carrot easily . So i am using here the Australian carrot available whole year and also fresh . It is orange coloured and taste is also little less sweet .

Ingredients

  • 3 Tsp Ghee (घी )
  • 1 Bowl  Carrot (गाजर )
  • 1 Bowl  Green Peas  (मटर )
  • 2 Green Chillies (हरी मिर्च )
  • 1/2 red Onion (प्याज )
  • 1 Tomato (टमाटर )
  • 1/2 Tsp Cumin Seed (जीरा )
  • 2 Tsp Kasturi Methi (कस्तूरी मेथी )
  • 1 1/2 Tsp Salt (नमक )
  • 1 Tsp Kashmiri Red Chilli Powder (कश्मीरी रेड चिल्ली पाउडर )
  • 1/2 Tsp Turmeric (हल्दी )
  • 1 Tsp Coriander Powder (धनिया पाउडर )
  • 1 inch Ginger
  • Coriander Leaves for garnish (धनिया पत्ती )

Directions

1 Make a fine paste of tomato , green chillies and onion .

2 Now in a pan , heat 2 tsp of ghee at medium flame . Add cumin seed and pop up . Add tomato-onion paste . Add grated ginger . And let it to cook for 3-4 mins .

3 Now add all spices like coriander powder , red chilli and turmeric powder , salt . Mix it well and cook for 1 min . Add green peas and diced carrot and mix it well .

4 Now add some water and cook for 5 mins . when carrot and green peas are completely cooked , garnish with 1 Tsp of ghee . The gajar-matar sabji is ready to eat .

5 Garnish gajar-matar ki sabji with coriander leaf . Serve hot with puri / roti .
