Carrot-ginger soup is the great combination of flavours with silky smooth texture . It’s super healthy, nourishing and fast to make!

Ingredients

  • 4 Carrot
  • 2 Tsp Butter
  • Salt
  • Black Pepper
  • 3 Garlic
  • Ginger
  • Onion
  • Bread Crumbs
  • Thyme / coriander Leaf

Directions

1 In a small saucepan, take 2 Tsp of butter .Add garlic and ginger , onion and the roughly chopped carrot.

2 Sauté the carrot . Add some water and make it boil . Simmer for 4-5 mins . You can also cook in pressure cooker for 2 whistles .

3 Strain the carrot using strainer and grind it to make a smooth paste . In the same pan , at medium flame take carrot paste . Add carrot water got after straining . you can also use the vegetable broth . Add 1 Tsp Salt and 1/2 Tsp black pepper .

4 Make it boil and simmer for 1 min . Adjust the consistency and it smooth ,creamy , silky texture . Add bread crumbs and garnish with coriander /Thyme leaf . Enjoy Hot at lunchtime /dinnertime .
