Popular toppings for Beetroot soup include sour cream or croutons , you can also serve this with crackers . Adding with grilled sandwich can make a complete dinner or lunch or brunch .

Ingredients For Soup

  • 1/2 Beetroot
  • 1/2 Tomato
  • 2 Tsp Butter
  • 1 1/2 Tsp Salt
  • 1/2 Black Pepper
  • 1/4 onion
  • 1 Carrot
  • 1 inch Ginger
  • 1/4 Onion
  • Mint Leaf / coriander Leaf

Ingredients For Croutons

  • 4 Tsp Butter
  • 4 Bread

Directions

1 In a small saucepan, take butter . Add ginger , carrot ,tomato , onion and the beetroot.

2 Sauté it for 2-3 mins  . Add some water and make it boil . Simmer for 4-5 mins . You can also cook in pressure cooker for 2 whistles .

3 Strain the vegetables using strainer .Now grind  to make a smooth paste .  In the same pan , at medium flame boil the beetroot paste .Add vegetable water / the vegetable broth   . Add Salt , and black pepper .

4 Make it boil and simmer for 2 min . Adjust the consistency .Add  some fresh creamy before serving to get the  smooth ,creamy , silky texture . Garnish with coriander /Mint leaf . Enjoy Hot at lunchtime /dinnertime with bread crumb ,grilled sandwich or croutons.

5 For making croutons , take butter in pan . Cut the bread in square size . If you want to remove the outer brown layer you can do this . I don’t want to waste so I didn’t done so . Now roast the bread at low- medium flame . Crouton are ready .
